HOW DO YOU CALCULATE THE NUTRITIONAL DATA?

We use an industry standard nutrition software database approved by FDA and USDA.  For more complex foods we use an independent laboratory that specializes in nutritional analysis that analyzes each dish multiple times. However, due to the hand-crafted nature of our food, varied suppliers, and any guest substitutions or special requests, it’s possible there could be minor fluctuation in the figures provided.
